Properly Slicing a Pepper

Chef Mary demonstrated how to properly chop a pepper. First, cut off the top and bottom, slit the remaining pepper and slide your knife across the inside to remove the bitter tissue. The tops and bottoms of the peppers are where pesticides can collect.

Tips

When to rinse and not rinse pasta:

Rinse your pasta if making a light sauce. Rinsing the pasta will reduce the amount of carbohydrates left on the pasta, helping to keep the sauce light. If you are using a thick, hearty sauce like alfredo, not rinsing the pasta will add to the thickness of the sauce.


Cooking with garlic

Make sure to keep an eye on garlic as you add it to the sauce to ensure it doesn't burn. Add garlic as the last ingredient to your sauce to ensure it doesn't burn. Chef Mary enlisted a class participant to focus on the sauce while she prepared the rest of the
